Ho scatenato il maggior esperto al mondo (che io conosca di PDF) ed ecco una 
prima risposta parziale:

I know different kind of "dvipdf" very well. Another tool is "dvipdfm".
Usually the font is not good because it is a bitmap font. TeX/Metafont fonts 
are
usually bitmap fonts inside the PDF.

E questo dovrebbe chiarire il problema. Inoltre:

An author have to take special care about to  include T1 or TTF fonts.

Questo dovrebbe essere per te :)
