io inizierei a fare pulizia...
comunque io non credo si possa aggiungere un default gw che sta su un segmento 
di rete diverso... 
insomma secondo me ci sei riuscito solo per via di questa riga:
> default         *               0.0.0.0         U     0      0        0 eth0

che fa sembrare che 10.0.0.100 sia direttamente collegato alla eth0.

A mio vedere il tuo default gw e' 192.168.75.250 nel quale dovresti impostare 
come default gw 10.0.0.100
