Dai dettagli risulta che la codifica del contenuto delle mail usa un  
charset ISO-8859-1.
Pensando potesse centrare ho abilitato la codifica it_IT.ISO-8859-1  
assieme alla già presente it_IT.UTF-8 in /etc/locale.gen.
Ho dato poi il comando locale-gen. Ma il risultato è sempre lo stesso.
