Actually do we need the double pointer here? I guess that it should work
with single pointer, but it should be volatile as:

Wouldn't it make more sense for the offset to be parsed by the
tst_parse_filesize() as well?

Also the parameter parsing code belongs to the test setup() so that it's
done once at the test start.

You lost the offset parameter here and it ended up being unused.

The io_sparse() function should really write to a region starting at
offset till the end of the file, like it did previously. There are
entries in the runtest files that pass non-zero offset and this breaks
them by silently dropping that option.
